How to Make Cold Cucumber Soup – Delicious, Healthy and Refreshing During Hot Days

For preparing this amazing soup you will only need the necessary ingredients and a blender. This soup is rich in water and therefore is the right solution for refreshment during the hot days.

Ingredients:

  • 2 cucumbers
  • one small lettuce
  • freshly squeezed juice of half a lemon
  • 2 cloves of garlic
  • half avocado
  • 1 tablespoon of olive oil
  • salt and freshly ground pepper
  • 1 tablespoon of fresh dill or 1 teaspoon of dried dill

Preparation:

First of all you need to wash the cucumbers, peel them, clean the seeds and finally cut the cucumbers into cubes. Now take the salad, wash it and cut it into smaller pieces. Then take the cucumbers and the lettuce and grind the in the blender. After a while add the lemon juice, the garlic and 2 cups of cold water.

Mix them all together until you get a smooth mixture and then add the chopped avocado and the olive oil and briefly mix them all together at medium speed. If the soup is too thick, you can add more water.Finally add salt and pepper and the dill to improve the taste of the soup.
